Brazil nuts are a nutrient-rich and tasty nut that can be enjoyed as a snack or added as a butter to various dishes. They are an abundant source of essential nutrients, such as vitamin E, selenium, magnesium, phosphorus, copper, and zinc, as well as protein, fibre, and healthy unsaturated fats.

Amazon rainforest conservation
The nuts we use are collected from wild trees that grow naturally in the Amazon rainforest. The nuts are collected by local communities and cooperatives using traditional and sustainable methods. The harvesting of Brazil nuts is an incentive for local communities to protect and conserve the Amazon rainforest. When local communities benefit economically from the forest, they are more likely to protect it from deforestation, illegal logging, and other threats.

Our raw cashews are just that, truly, totally and certified raw!

‘Ordinary’ cashew nuts are heat treated by necessity in the cropping process. Cashew grow from the base of the cashew apples, a fruit that we don’t commonly eat.  These fruits contain an acrid oil called urushiol, to remove the urushiol most cashews world-wide are subject to fairly intense heat to clean the nuts and remove this natural substance. Therefore these nuts are not truly raw. We have however, after many years of searching, managed to source some truly raw cashews. These are laboriously and meticulously air dried at ambient temperatures to remove the urushiol, the process takes considerably longer and therefore it is not usually financially viable from but we have finally located a small organic growers co-op who do use this method.  Our next consignment is mid way between us and Vietnam as we speak!

Therefore both our Raw Cashew Nut Butter and Raw Rainforest Nut Butter are exactly that, truly raw and truly delicious!

Our nut and seed butters are great for coeliacs or those who follow a gluten free diet, as we know from making them, some gluten free recipes can be dryer than gluten containing versions, add a dollop of a Carley’s nut or seed butter and moist cakes and bakes reign supreme again!
